Information about the FCP Essential Training course

This course has an introduction to FCP's plus the six lessons required as 'Essential Training' in the staff training records of the FCP

Here are the six 'essential' elements that 'all staff' must receive training in 'before they can work':

  • Health and sickness
  • Hand hygiene
  • Personal hygiene
  • Cleaning and sanitising
  • Food allergens
  • Potentially hazardous food (AKA readily perishable foods)

The day-to-day manager is tasked with training their staff but from my own experience as an auditor/verifier of the FCP, I know that this is often difficult for the manager, particularly when there are many staff in a business and/or where there is a high turnover and a lot of staff are casuals. 

The food business can tailor their FCP to include some additional training items and more senior staff will require additional training in other components of the plan.
